I’m still on a documentary watching kick during my home workouts browsing through Netflix’s selection and checking out recommendations based of ones I’ve watched already. The latest documentary I just finished is Life in a Day, a beautiful, raw, and haunting look at July 24th, 2010 as captured by people from around the world.
It’s a collection of various video clips from many different devices, cultures, and people that are paced to follow the day starting in the wee hours of the morning, then on to various morning routines, food, birth, love, fear, etc. And it’s a very interesting peek into other people’s life in a very raw, uncensored way. It made me thankful for my life, appreciate diversity, and aware that my problems are pretty puny compared to what others are going through on this planet. Probably not the best documentary for kids since there are some graphic clips, but it’s a fascinating journey.
After my long weekend of splurge eating, I decided it was time to get back into a high-raw habit this week. Especially since our weather has been warming up a bit with highs in the 60s and gorgeous. I was going to use avocado in this recipe tonight, but had to change that plan because the ones I have are no where near ripe. I swapped it for a banana and came up with a sweet and spicy curry dressing.
Banana Curry Dressing
- 1 banana, peeled and chopped
- 2 tbsp. lemon juice
- 1 tbsp. curry powder
- 1 ” chunk of fresh ginger
- 1 clove of garlic
- 1/4 tsp. salt
- 1/4 cup water, as needed
Place all ingredients into a high speed blended and blend to a smooth and creamy texture. Makes about 4 servings.
The dressing is a vibrant orange color with a creamy texture.
And it coated a large salad nicely.
I topped the salad with hemp seeds and nutritional yeast for a easy and healthy dinner to start the short week.
The dressing has a strong curry flavor with a little spice from the garlic and sweetness from the banana, perfect to add flare to a plain spinach salad.
