Avocado Curry Dressing

Back to the grind today after a fun weekend and it could be a crazy week being on call and lots going on at work. At least the weather was beautiful today and I got some play time with Miko and his giant stuffed toy outside.

He follows us all over the house dragging it in case we’re ready to play with him, so sweet.

Lately I’ve been loving avocado and curry, something about the smooth and rich texture with a spicy flare of curry. Since I have a few ripe avocados to use up, I finally tried the avocado curry dressing recipe I’ve been thinking about for awhile and it came out perfect – simple and fast with a lot of flavor.

Avocado Curry Dressing

  • 1 avocado, seeded and scooped
  • 1 clove of garlic
  • 1″ chunk of fresh ginger
  • 1 tbsp. of curry powder
  • 1/2 tsp. of salt
  • 1/4 cup of water

Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Makes about 4 servings.

The texture of the dressing is very thick and creamy, I had to scoop it out of the blender and thoroughly mix it with the salad.

But it coated the salad perfectly with a light, creamy, poppy, and tangy curry flavor.

And made a great start for what could be a crazy week.

    As always looks amazing! I bet the curry with the avocado was wonderful! And those walnuts – OMG – I’m so hungry for walnuts! I thought I had some in my house but I must have used them all! Grrrr!

      Thanks and I know what you mean about walnuts, I could eat plenty in one sitting!

    I tried this recipe today and it was heavenly!! I think I’m gonna get addicted to it in no time. Used it for my salad and ate a HUGE bowl without even noticing it (usually I kinda force myself to do it). Wonderful.
