Wow, is tomorrow really Christmas Eve? Crazy! I’ve been having a relaxing long weekend that started on Friday, I took the day off work to shop all day with my sister at the mall and surrounding shopping areas. It was actually a blast because we weren’t looking for gifts or on a time crunch, just browsing the sales and doing a little shopping for ourselves. It didn’t even matter that the weather was horrible for most of the day as it’s been all weekend with non-stop crazy rain and wind here. We started the day with a massage, before doing some serious shopping, I got a new running sports bra, 2 pairs of pants, 3 tops, and two new pairs of vegan boots, and a gift for my boss for under $200 thanks to her help. I still need new running shoes soon, but maybe I’ll hit the after Christmas sales for those. We wrapped up the day at a local Mexican restaurant for happy hour mojitos.

And I had vegan enchiladas with chocolate mole sauce, just awesome.
It was a fabulous day of girl talk, catch up, people watching, etc. Especially fun since I haven’t been to the mall or clothes shopping in a long time while saving money for the last year, so my wardrobe needed a little updating!
Yesterday I spent nearly 2 hours wrapping gifts since I’ve been putting that off.
And I’m terrible at it too, definitely not the Martha type here!
Then hubby and I ventured to Costco and Whole Foods to get food for the upcoming holiday gatherings which was nuts, but not as crowded as I was picturing thanks to the bad weather I think. Our lazy little dogs have been toasting in front of the fireplace or in our laps most it the weekend not wanting to go outside at all.
And I came up with a new hemp seed salad dressing to use up lemons that’s very tangy, tart, and tasty. Just a little goes a long way as a dressing or dip!
Hemp Lemon Dressing
- 1/4 cup lemon juice
- 1 clove of garlic
- 2 tsp. Dijon mastard
- 1/2 cup shelled hemp seeds
- 1/4 tsp. salt
- 1/4 tsp. black pepper
- 1/4 cup water, as needed
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Makes 4 servings.
The dressing has such a powerful lemony taste that I enjoyed using it as a light dip for salad instead of coating the salad in it which makes it a great option for lighter salads.
This morning the weather is horrible still, rain and strong winds have been hammering the house since yesterday. So I’m happy to hang out indoors, hit our home gym, watch a Christmas movie or two, and do a little recipe experimenting before hitting an evening Christmas service. A little bummed that I couldn’t cram in a run this weekend, the wind is just too crazy. But taking a little break from running might be in order since my legs are a little sore still from a windy run last week and all the shopping.
