Halloween was pretty low-key here, hubby carved the pumpkin into an adorable minion from Despicable Me.
And I dashed to Target after work to grab Halloween candy which probably wasn’t the best idea waiting until the very last minute, the candy aisle was total chaos with bags thrown everywhere and slow-moving carts trying to find the good stuff. Luckily there were a few bags left and I got home before mobs of trick-or-treaters started beating on our door.
I thought I’d keep dinner simple with this Pasta Avocado recipe from Jennifer Cornbleet.
I served it topped with tomatoes and sauteed cauliflower for a filling dinner before the doorbell-ringing, dog-barking madness began.
The recipe is good for being so simple, I upped the spice a bit and topped with a little pepper.
For tonight’s dinner I went back to one of my recipes – Raw Broccoli Corn Soup.
Raw broccoli is not easy to enjoy for me, the tough texture and slightly bitter flavor is not always great. But this soup is one of my favorite ways to enjoy it raw because the sweet corn counters the bitterness while the Vitamix blender takes care of tough texture. :-)
And it’s a simple soup to throw together in minutes. I kept the simple theme by sauteing tempeh chunks like tater tots to go with it.
And got to share the tempeh with this sweet face.

and fun pumpkin! We used magic markers rather than a knife to carve this year – so much easier…haha!

Thanks, he’s pretty fun to have around. :-) I always feel guilty if I’m not at home for Halloween handing out candy because we get so many trick-or-treaters.
