Hi and happy Thursday! I’m thankful this short week is almost over and looking forward to more fun this weekend. But it’s probably been a more trying week for Leela who keeps losing part of her dinner to a cat.
Out of the blue, Leela has decided she’s not a fan of her current dog food taking a few bites, then walking away and shocked when Smokey moves in. This is a great time to try her on V-Dog again, but she’s such a picky eater who’s not a fan of dry dog food. Or I can try her on raw vegan dog food again since that went so well the last time. :-)
My little getaway last weekend was a blast filled with decadent eating, but I’m enjoying getting back to my high-raw routine with fresh salad dressings. Along with apples, cinnamon, and pumpkin, curry is another great fall flavor to me and it blends well with carrots, coconut, and hemp seeds – of course. :-) It also goes perfectly with cultured veggies adding a rich warmth to the tangy flavor. I created another variation of a hemp curry dressing that’s lighter, but still rich in flavor.
Savory Curry Dressing
- 1/2 cup shelled hemp seeds
- 2 carrots, chopped
- 1 tsp. curry powder
- 1 tbsp. coconut oil
- 1/4 tsp. salt
- 2 tbsp. lemon juice
- 1/2″ thick chunk of fresh ginger
- 1/8 tsp. turmeric
- 1/2 cup water
Blend all ingredients in a high speed blender until smooth and creamy. Makes about 4 servings.
The vibrant orange color sings fall, but the creamy texture is all comfort.
Comfort that coats a large salad nicely with a rich, bold, and savory flavor.
Mmmm, fall is near!
