I can’t say I’m not glad this week is almost over, it’s been an interesting one at work. And by interesting I mean crazy stressful. Miko, on the other hand, has not been having a stressful week. He’s been very content working at home with hubby and taking in a little lap chill time in the evenings.
What a life. And reminder I need to beef up my 401k contributions.
Today was farm box delivery day which is exciting for me, I’m always temped to use as much of the fresh produce as I can for dinner. Tonight I exercised a little self control opting to use just two of the tiny heirloom Gravenstein apples.
To create a new fall themed hemp seed dressing of course!
Ginger Apple Dressing
- 1 large apple, or two small
- 1″ chunk of fresh ginger
- 1 tbsp. apple cider vinegar
- 1/2 cup shelled hemp seeds
- 1 tsp. soy sauce
- 1/4 tsp. paprika
- 1/4 tsp. chili powder
- 1/4 tsp. cumin
- 1/4 cup water
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Coat a 4-6 serving salad with it or serve on the side.
Ginger goes so well with fruit in blender sauces and dressings, the bright and crisp flavor lights up the slight sweetness to blend beautifully with savory tang.
I coated a large salad with the dressing that also included sauteed chunks of tofu to make it a heartier meal salad.
The dressing tasted like a fresher, punchier Cesar dressing with a bright ginger twist.
After a long, hot, and stressful week, it’s a refreshing reminder that cooler Fall is around the corner.
And the dressing is Miko approved.
