Two days into the work week and things aren’t looking too bad, work madness is settling just slightly and I’ve been feeling pretty great about my half marathon training so far. I’m actually enjoying my weekday runs on a treadmill at the gym after work, it’s kind of nice to get my workout done right after work and being able to come home and relax with a glass of wine while preparing dinner. And treadmill running seems to be a good tool to increase my pace by upping the speed and forcing myself to maintain it. That seems to be a challenge for me when running outside, it’s too easy to slow down and enjoy the sights when I start feeling tired. I’m still doing my long weekend runs outside on cool mornings, but pushing my pace on a treadmill with 3-4 mile runs during the week in the cool air conditioning with triple digit heat outside and that seems to be working well so far.
I’ve also been making more time to play with the pups, but this guy is ready to play all the time!
And coming up with more simple and delicious blender salad dressing recipes! Honey mustard dressing used to be one of my favorites back in my non-vegan days – flavorful, spicy, sweet, and low cal compared to many other dressings. But not exactly vegan-friendly with honey. So I finally decided to high-raw “veganize” it with a simple ingredient list that comes together in minutes in the Vitamix.
Sweet Mustard Dressing
- 1/4 cup shelled hemp seeds
- 2 tbsp. apple cider vinegar
- 1 tbsp. turbinado sugar or agave nectar or liquid stevia
- 1 tbsp. prepared mustard
- 1/4 cup water, as needed
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Makes 4 servings.
With the full 1/4 cup of water, the dressing comes out slightly thin, but that worked great for pouring over and coating a large salad.
It tastes much like a traditional honey mustard dressing with slightly less fat and more protein thanks to the hemp seeds. And coating a salad in it preserves it nicely for a few days, perfect for lunch leftovers at work.
I just can’t get enough cool, large salads during our hot summer days – perfect after an intense treadmill run.
