Miko got a box this week that made him very happy. Not one, but five of his favorite stuffed moose toys! When I couldn’t find a replacement locally, I had to order online and could only find them in 5 packs, so we’re stocked for awhile!
And he’s been squeaking it all over the house since we gave him one.
Taking naps with his new buddy.
And chasing us around the house with it in case we wanted to play fetch.
Poor Shadow has taken cover from all the action.
While I finally broke away from an endless game of fetch to whip up a new fruity summer salad dressing that’s both tangy and sweet while using my favorite ingredients – hemp seeds!
Creamy Raspberry Dressing
- 1/2 cup of shelled hemp seeds
- 1/2 cup of fresh or frozen raspberries
- 2 tbsp. balsamic vinegar
- 2 tsp. turbinado sugar or stevia drops
- 1/2 cup of water, as needed
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Makes 4 servings.
The color of the dressing is a beautiful and vibrant pink.
And it enhanced tonight’s kale salad nicely countering the slight bitterness from the kale with a smooth sweetness.
The dressing has a sweet, bright, and tangy flavor that works great with fruit salads or a veggie salad with sweeter veggies.
Miko even took a break from his busy play schedule to offer his plate cleaning services.
And didn’t leave a drop of the dressing.
