Yesterday’s celebration for the 4th at my father’s house was so pleasant after 2 days of insanity, it was perfect to disconnect and spend the day with family even if a little too much wine and food was had. It wouldn’t be one of our family gatherings without plenty of veggies, hummus and wine for hors d’ oeurves.
We tried to keep things simple for food for this celebration stuck in the middle of the week, I just brought a huge fruit salad with plenty of watermelon, strawberries, blueberries, and many other fruits while my sister brought a huge veggie salad. So my round one plate was loaded!
Round two was grilled corn and a vegan pesto pasta dish my other sister made, very filling, but fabulous considering I rarely have pesto coated pasta. :-) And I’ve been enjoying the leftovers all day today thankful for the simple, healthy meals during another busy day.
After dinner it was time for sparklers and water balloon fights in the back yard for the kids and husbands. :-)
Then a round of street fireworks which were still fun despite it not being dark yet, my nieces and nephew thought our cheap fireworks show was much better than a big professional show. I agree, I was in no mood to battle crowds late night on a work night!
While we kept our doggies safe at home from the fireworks, my dad’s mellow dog didn’t seem phased by the loud noises in the neighborhood at all.
It was a super fun and relaxing day with family that ended too quick, I was not ready to go back to work today for another busy day. A nice run and workout after the crazy day helped me de-stress and remind myself things will settle down soon. Thankfully tomorrow is Friday and hopefully a relaxing weekend to follow! :-)

Aww, we didn’t get to do any fireworks– I missed them! I like to at least have a sparkler or two, but no dice this year! :-)
