Another Creamy Avocado Dressing

So far July is off to a stressful start here, the work week started with a bang with a couple of server issues today and I’m on call this week dealing with more issues tonight and hoping for things to settle down enough to get in a workout, ugh! I had a feeling this was going to be a nasty week and spent most of yesterday relaxing at home letting the dogs enjoy the warm sunshine in the backyard.

Except Leela, she wanted nothing to do with the heat and was very content in her chilled bed.

She has very thick fur and tends to overheat easily in the summer heat here, so we put a gel ice pack in her bed to cool her down after walks.

Since I knew this was going to be a tough week, I made a huge batch of Banana Chocolate Kale Chips to have a chocolate stash in the pantry.

Half of them might already be gone. :-)

I also made a huge batch of vegan chili with this bean mixture to have simple leftover meals during the week.

I love this colorful mixture, so lively and bright in chili and stews.

Today I was just craving a huge salad for dinner after a crazy day, simple and nutrient dense. And I created a new avocado dressing to go with it to satisfy my craving for creamy comfort food too.

Savory Green Dressing

  • 1 avocado, seeded and chopped
  • 1/2 shelled hemp seeds
  • 2 tbsp. lemon juice
  • 1 green onion, chopped
  • 1 clove of garlic
  • 1 tbsp. miso paste
  • 1/4 cup water, as needed

Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Makes 4 servings.

Yeah, it’s thick. Enough to be a dip or hummus alternative!

But it also coated the veggies beautifully with a tangy and rich flavor, kind of like deluxe mac and cheese, only a raw salad. :-)

Now it’s time to sneak off to the gym hoping my workout is not interrupted by another work call!

    I can’t wait to make those kale chips. It seems like wherever I go lately, the theme has been smores, so I would love to have a healthy version and still feel like I am indulging. Oh, I sure can tell who rules the roost at your house! Do the dogs get along well? Did you get them at the same time?

      Thanks on the chips, they do have a smores-like flavor, the combo of the cacao power and banana mimic the toasted marshmallow flavor to me. We have 2 chihuahuas and watching a 3rd chihuahua this week for my mom and they get along pretty well. They were all adopted at different times and our two are rescues with different histories and personalities. Our female chihuahua seems to get the most cranky with the two males at times since she’s not as hyper or playful.
