Is it Friday yet? Someone please say yes! Things just have not been slowing down at work, I spent most of the morning putting out fires and feeling torn in 14 directions at once. Weeks like this are tough because I come home feeling mentally drained and not too creative for dinner. Not a problem for our cats who spend most of the hot summer days parked on our bed in the cool air conditioning.
Yup, life’s tough for them.
When it actually gets tough for me, I like to keep things simple for dinner and fast tempeh burgers are a great way to do that. Simply take an 8 oz. package of tempeh and slice it into four patties.
Boil the patties for about 10 minutes.
Heat a couple of tablespoons of olive oil in a large skillet over high heat and place tempeh patties into the skillet. Drizzle a little tamari sauce, garlic powder, and onion powder on them. Flip the patties after 3 minutes or to desired crispiness, drizzle more tamari, garlic power, and onion powder, and cook for another 3 minutes or so.
And simple tempeh burgers are served!
I just placed them on a cabbage leaf and topped with mustard, tomato, and shredded carrots. But you could get crazy with buns, collards wraps, raw breads or wraps, and customize with just about any burger condiment.
The flavor of the burgers is rich and savory with a little seasoning kick while not being too salty or heavy. And the texture has a nice outer crunch while staying moist inside.
I was thankful this meal took little time and did not make a mess of our kitchen for a whole foods dinner. While the cats slept through the whole thing.
love the burger idea and the bright cabbage! hope work calms down for you!
Thanks, me too on work – I keep telling myself soon! :-)
oh cats! They have quite the life don’t they! Work can’t seem to slow down for me either, I feel your pain. Your tempeh burgers look delicious though.
Sorry about your work too, I guess it’s good the economy is picking up – but argh!
These are delicious! I always love to try to “burger” recipes! It’s a lot more fun and creative than buying frozen veggie burgers. And I also love trying different tempeh recipes. I served them on collard wraps with tomato and red onions. Yum!
