Is there anything more decadent and unhealthy than a traditional Alfredo sauce? Most of the recipes I’ve seem are solid cream, butter, cheese and all-fat milk. Not very vegan friendly and a dangerous gut bomb when paired with pasta. But I never get tired of creating healthier, high-raw versions to coat veggies in. Tonight I threw together a creamy tomato hemp seed version that came out nicely with a thick and creamy texture, perfect for coating spiral sliced zucchini “noodles” and lightly steamed broccoli.
Tomato Hemp Alfredo Sauce
- 1 cup shelled hemp seeds
- 1 clove of garlic
- 2 tbsp. lemon juice
- 1/4 cup of nutritional yeast
- 1/2 tsp. salt
- 1/8 tsp. ground pepper
- 1 medium tomato, chopped
- 1/2 cup of water
Place all ingredients in a high speed blender and blend to a smooth and creamy texture. Use as a salad dressing or creamy sauce based for veggies. Garnish with fresh chopped parsley (optional) and enjoy. Makes about 4 servings.
The sauce coated the spiral sliced zucchini beautifully and had a rich, reddish color from the tomato.
The fresh parsley added a fresh and bright texture and flavor to the dish with a nice color contrast.
I also topped the raw Alfredo dish with hemp seed parmesan mixture.
It made a fresh and seemingly decadent nutrient-dense dinner, the sauce has a smooth, rich, and creamy flavor that was very satisfying. I could see using it as a salad dressing too or for a raw vegan Alfredo pizza … hmm, I need to try that next!
Our plate cleaning service also approved of the sauce.
