At my niece’s birthday party a couple of weekendss ago, I got chatting with a family friend about eating healthier and she expressed frustration that time and planning for dinner is an issue while working full time with a young child, she and her husband are too fried after working all day to put together a good meal. I’m fried enough after long work days, I can only imagine what it’s like to add parenting duties to my nightly routine! But one dish that always works for me after a bad day is a stir fry where just about anything thrown into a wok goes and dinner is ready in less than 10 minutes and cheaper and easier than take out. I do a lot of stir fries during the week, like:
Since it’s Thursday, our kitchen is running a low on fresh ingredients, I had to get a little creative for tonight’s stir fry using up what we had. But I got inspired when letting the dogs run around like maniacs in the backyard.
And noticed our chard plant seems to be doing really well, it’s about as tall as me after a growth spurt the last few weeks!
So I harvested some for a stir fry.
Which also included LightLife Three Grain tempeh, my all-time favorite stir fry ingredient.
But chard can be slightly bitter and I wanted something slightly sweet to counter that and found a half-used bag of frozen pineapple chunks in the freezer – perfect!
Then I added the last bit of spicy peanut sauce we had in the fridge along with some tahini and soy sauce for a fabulous 10-minute, one-pot meal!
The soft and sweet pineapple chunks were perfect with the nutty tempeh and strongish chard flavor.
When all else fails for dinner inspiration, there’s always the stir fry! Or a big salad, of course. :-)

I never think to make stir fries but they are deeeelicious.
