Friday is getting closer thankfully! It’s been a long week for me already, I haven’t slept well for the last 3 nights for one reason or another – allergies, stress, and this little guy having allergies apparently.
He woke me up twice last night having a wheezing sniffling attack at 1 and 3 AM. And it took an hour to get back to bed, ugh! I felt so tired and achy this morning I almost called in sick to work. But couldn’t when I remembered how much I need to get done this week and somehow made it through the day feeling like a zombie. And when I got home discovered we only had one dog food left, Miko and Leela had to share it with dry dog food and they were not happy about that at all!
Add guilt as another reason not to sleep this week! And I’ll be shopping after work tomorrow!
Tonight I dived into my dwindling stash of hemp seeds to create another cheesy hemp sauce because that’s comfort for me after a busy day. Consider this sauce the creamy deluxe of hemp sauces that might come in a squeezable shiny, silver pouch if it was a processed cheese-like product. Instead I scrapped it from the Vitamix container over lightly steamed broccoli in less time than it takes to boil dried pasta.
Deluxe Cheesy Hemp Sauce
- 1/2 cup shelled hemp seeds
- 1 red bell pepper, chopped
- 1/3 cup nutritional yeast
- 2 tbsp. lemon juice
- 1/4 tsp. turmeric
- 2 tbsp. soy sauce
- 2 tsp. Dijon mustard
Place all ingredients into a high speed blender and blend to a smooth and creamy texture. Start on a low speed and increase when large chunks are blended into the sauce. Makes 2 servings.
The sauce is think, very thick. I had to use a spatula to scrape it from the container which is a good thing!
It coated the broccoli nicely adding a rich and creamy flavor.
The sauce isn’t spicy or kicky like a nacho sauce, the milder flavor might be perfect for kids.
