Guess what? I’m finally participating in What I Ate Wednesday again!
7 AM Breakfast – Smoothie consumed during the drive to work.
This one packs collard greens, carrot, frozen banana, VitaMineral Green, Vega Smoothie & Go powder, and a chunk of fresh ginger pureed into a green monster smoothie in my Vitamix.
10 AM Snack – After a long meeting and cable run, I was hungry for a snack and dived into the jug of Red Vines in cube area.
Not usual for me and I’m not proud of it, but they’re vegan! :-) Typically I stash an apple in my purse for an emergency snack, forgot today. D’oh!
11:45AM Lunch – I made up for my junky snack by heading to Whole Foods for lunch to raid the salad bar.
And enjoy a little fresh air sitting outside before the winter weather kicks in.
Came home and played with this little guy for a bit.
Who’s already ripping green fuzz out of his new toy.
5:45 PM Dinner – I desperately need to grocery shop, I have not stocked up in nearly two weeks thanks to playing last weekend in San Francisco. But I did have a package of PastaSlim noodles and Trader Joe’s frozen edamame to work with.
The instructions on the noodles simply say to rinse them and heat them up before serving. But that doesn’t work for me since they don’t have the best flavor and texture. However, they can be very good when stir fried in a wok with sauce, it does wonderful things for the flavor and texture of the noodles. Tonight I stir fried them with the edamame, carrots, minced garlic, minced ginger, and soy sauce for a simple and fast dinner.
I added toasted sesame seeds for more texture and flavor and it turned out to be a great dinner even though I wasn’t following a recipe and just throwing ingredients into a wok.
6:30 PM Dessert – Apple slices with a little pumpkin butter for dipping.
It wasn’t my best food day thanks to a long, stressful day at work. But it wasn’t bad either and hopefully tomorrow I’ll remember my apple. :-)

I get that TJ’s edamame though. And the Kevita…need to try that. I have coupons for it in my wallet or a random kitchen drawer that I need to find!
And red vines (well twizzlers) is a fave!

I like that edamame, good source of protein and fiber that’s fun (and easy) to work with.
The coconut Kevita is good, like drinking a mild coconut yogurt.

i love this! glad you shared what you ate and was real about it! good to know that red vines are vegan. trying to eat a bit more vegan these days but am falling closer to vegetarian at times. what i noticed though is i snack a lot more than you! have a great weekend christine. sorry i have not been commenting much. life has been too busy!

I have days where I snack more too, especially on weekends when I’m running around more. I hear ya on being busy, my job is still nuts!

I love how many veggies you get into your smoothies– I usually only go the fruit route, plus spinach or kale– I need to branch out into other veggies!

Thanks, spinach and kale seem to barely affect the flavor and lately I’ve been loving adding frozen, shredded pumpkin with bananas for a pumpkin pie smoothie. :-)

I am so jealous you have a whole foods in your neighborhood. That salad bar looks amazing! So, does your smoothie.
I had the best spinach/banana smoothie on my way to work. Need to keep my blender out full-time (not just summers). ;)

Not too bad at all for a busy day! The stirfry looks goood too! It’s the best when you turn “nothing into something” like what’s laying around into a tastey dinner :)

Thanks, getting creative with minimal ingredients can be fun. Plus I like having an emptier fridge and freezer sometimes, make me feel less cluttered. :-)
