I’m ready for Friday and it’s only Tuesday, that can’t be good! We’re still super busy at work and when I got home from work tired and cranky, I was treated to this cute scene.
Miko has decided the fireplace hearth is his personal sauna toasting his little rear.
The goofball will toast himself until he’s practically overheating and panting.
I felt hot just looking at him! And just lazy after a long day, so I went with a simple salad for dinner after a decadent one Sunday. For the dressing, I mixed a little stevia, rice vinegar, and miso in a bowl.
I wasn’t following a recipe, just mixed until I hit the right balance of sweet and tangy.
And I grabbed the bag of Trader Joe’s frozen edamame from the freezer to add hearty protein and fiber to the salad.
I sauteed them with a little sesame oil and soy sauce until they were slightly charred and made the kitchen smell heavenly in the process.
Then just tossed the edamame and dressing with a generic salad of carrots, spinach, red pepper, and chopped tomato.
Topped with sesame seeds and my quick dinner salad was ready to go.
The sesame oil and dressing coated the salad well and the slightly crispy edamame and seeds added satisfying crunch. It was filling enough without being too heavy, perfect for a 3.5 mile power run I did after dinner, a much needed mood-lifter after the crazy day.
And I ordered myself another mood lifter – May I Be Frank on DVD!

Ugh, wish movies like this would get wider screenings instead of Jack and Jill! Thankfully it’s available on DVD now, just in time for the holidays. :-) I can’t wait to watch and review it!

Yummm I love edamame! It’s so protein packed! I usually just toss some on my salad but this looks delish!

I am loving the sauce with rice wine vinegar and stevia. And the sauteed edamame. I eat edamame every day and stevia, too. I used to use vinegar tons too but fell outta the habit..must reincorporate!

Haha…Baxter used to do that when we’d light a fire in PA. He’d lay so close to it, his belly would turn bright, bright red. Goofy dogs :-)

Simple dishes sometimes are just great and satisfying. Your salad looks like just that. I’ve been waiting to watch that movie as well. It’s seems really nice. Enjoy!
