Today was definitely a Monday! I was hoping things would slow down a bit with this week being a holiday week, but oh no. Or maybe I’m still just a little tired and cranky recovering from being sick over the weekend and juggling extra work with others still out sick. It was nice to come home to a relaxed household.
And feeling sleepy looking at lazy dogs.
Being a foodie, I usually have a new recipe I want to try or a favorite dish I want to make for dinner in my mind by the time I get home. Not tonight, I was feeling fried and a bit hurried wanting to fit in an after-dinner run. So I grabbed two pantry ingredients to start with.
I simmered 2 cups of veggie broth with 3/4 cups of quinoa and added a dash of apple cider vinegar for seasoning.
Then why not add a bay leaf?
And some soy sauce, fresh spinach, carrots, dash of ground coriander, and salt and pepper.
I simmered the mess for 20 minutes while I quick steamed some asparagus in the microwave and my quick dinner was ready.
The quinoa came out really good for an unplanned throw-together – tangy, savory, nice texture, and very filling.
And it left plenty of time for me to tackle a mountain of laundry I didn’t get to over the weekend.

It came together nicely for an unplanned throw together and the leftovers would probably be great cold on a salad.

Phew. Sounds like a Monday to welcome the work week. Good thing you’ve got good food at the ready for healthy tastey throw together dinners. Hope the rest of your week goes up from here!

perfect simple and easy and satisfying dinner. i love dinners like that mid week because they do not take much time. so sorry you are feeling fried this week. i feel so lucky to have the week off to recoup. hopefully you get a few days off?
