Keeping It Mellow

Ugh, how is it Sunday night already? I’m way too relaxed still to go back to work tomorrow because we spent our long weekend relaxing, catching up on house work, watching movies, shopping, and eating leftovers with a few runs and trips to the gym. The weather has been chilly, rainy and foggy, perfect fireplace weather. But someone has been hogging the fireplace most of the weekend.

Smokey’s not impressed.

Unless there are birds in the backyard to entertain her.

After our kitchen party on Thanksgiving, I’ve been living off a fridge full of leftovers for the weekend. I used leftover peas and avocado salad to build a lunch salad dressed with nutritional yeast and Bragg Liquid Aminos.

And more leftover avocado salad with simple steamed asparagus.

It was hard, but we also finally finished the Funky Monkey tofu peanut butter pie and it’s just as good two days later.

Since I finally polished off all the leftovers, I actually had to cook again for dinner tonight. I went for a simple, go to meal grabbing a package of Trader Joe’s organic tempeh and some veggies to stir fry it with.

I’m a little new to working with baby bok choy, which is pleasantly sweet and crunchy, I just chopped it up to throw into a wok.

And used Organicville Sesame Teriyaki Sauce and Marinade as the stir fry seasoning with a little added garlic and ginger.

The asparagus was an interesting add to the stir fry, but it needed to be used up and actually tasted great with the tangy sesame of the sauce.

Super simple dinner taking about 15 minutes to prepare.

Then a pomegranate for dessert which I normally wouldn’t buy because they’re messy and tough to eat, but I got a few in our farm box and enjoyed the flavors and crunch while only staining my hands.

Yikes, now I’d better heave that load into the dryer so I actually have something to wear this week!

    Oh the bok choy looks great and so does the pom but the Funky Monkey tofu peanut butter pie looks better :)

    And your pets are as adorable as ever!

    It’s nice to hear a peppyness to your post. Breaks and holidays can do that so nicely :) I feel like “my cup was filled” both with energy and positivity since I went home for this long weekend. Food looks good, and I’m sure it was just torturous finishing that pie ;P Hope you’re Monday is going well!
