Usually I know what I want for dinner by the drive home from work, I’m already thinking and planning it. Sometimes I know what I want by 10 AM and have a recipe written to try if I got stuck on a long call. But it’s been such a strange and stressful week that I had no clue, I just stared into the fridge drawing blanks tonight. Oh, I was tempted on the frozen vegan meal I splurged on for just such occasions, but decided I had too much fresh produce to use up. Instead I pulled out a huge chunk of broccoli.
And steamed it with some frozen edamame.
Luckily I remembered a great Cheesy Sauce recipe Gena posted awhile back because I also had zucchini and red peppers to use up.
And thankfully its fast and easy to toss the ingredients into the Vita-Mix turn into something that looks a lot like cheese sauce in minutes.
It’s also super thick and gooey reminding me of the processed cheese-coated broccoli sides back in school lunch days.
Only this sauce was much better flavor-wise and health-wise being pepper and zucchini-based and packing an adult flavor with tangy mustard and richness from the nutritional yeast.
Yes, dinner was a bit ghetto looking. But also tasty, fast, and nutritionally dense, so I’ll call it a win.
And it was a fun throwback to easy breezy childhood times.
Gena’s recipe is another fabulous vegan cheese alternative packing plenty of flavor and veggies in a form that’s fun. And possibly a kid-approved recipe.

Gosh i havent thought about those in ages but yes…reminds me of them too. But about 1 million times healthier!
It also reminds me of broccoli casserole type things my mother would make…but again, hers was full of cream and cream of mushroom soup and all kinds of less than “healthy” ingredients.

Oh I had plenty of casseroles like that growing up, I don’t miss cream of anything soups! :-)

That cheese sauce looks so yummy. I bought a bag of pre-prepped kale today (2 pounds for 3.86) and I’m thinking steamed kale with nooch and honey might be dinner :)

oh this looks like heaven on a plate! i have a recipe on i want to try tomorrow night that is a cheeze sauce. if it is a fail i am gonna try this one. YUM!

This is a very worthy vegan cheese sauce for being lighter and veggie-based. I’ll probably use it as a salad dressing next. :-)
