Hemp Butter Pate

June 21, 2011 by christine

Summer is officially here, it was 102 degrees today! Crazy that I was complaining about the cold just earlier this month. Our poor garden is feeling the heat and looking a little sad.

But the cute little sunflowers in my backyard are blooming in the sweltering heat.

And all I’m craving is cold, raw meals which is great. And I’m still working through a jar of grape leaves in my fridge having fun creating raw pates for.

Tonight’s pate was a creamy and savory hemp butter.

Hemp Butter Pate

  • 3 cups hemp seeds
  • 1/2 cup lemon juice
  • 1/4 cup tahini
  • 2 tbsp. Braggs Liquid Aminos
  • 3 green onions, chopped
  • 1/4 cup chopped parsley
  • 2 cloves garlic
  • 1/4 tsp. salt
  • 1/2 tsp cayenne pepper

Place all ingredients into a food processor and process to a nut butter-like texture, stopping and stirring the mixture a couple of times. Then enjoy! Makes 6-8 servings.

Heh, the color of the pate matched the grape leaves almost exactly. And the texture is very much like hemp butter, but more creamy.

I wrapped the pate with sliced tomatoes and carrots for a savory, BLT-like texture.

And they were delicious, not adding too much salt the the pate worked well since the grape leaves are a bit salty on their own. But the pate tasted a lot like savory almond butter, which surprised me because plain hemp butter does not. Adding the tahini made a huge difference in the flavor and texture. It also seemed to reach a creamy texture faster in the food processor compared to just hemp seeds.

Now I have a huge jar of the hemp pate in my fridge for lunch tomorrow, and the next day, and the next …

Give this pate a try for a quick and nutritious alternative to nut-based pates. Now I have a bowl of frozen grapes calling me before hitting the gym!

Christine, I thought of you today because I went to Whole Foods during my lunch.

I got some salad off the salad bar called a Power salad. It was kale, quinoa, blueberries, apple, feta cheese, peppers, etc… with a light balsamic dressing on it – it was fantastic!

I even embellished it with edamame, corn, carrots and cauliflower.

Sorry it’s so hot there! We go from 90’s to 70’s in Chicago!

The salad sounds great, I love escaping to Whole Foods for lunch!

The weather sounds great in Chicago, lucky! Hopefully it will be cooling here soon.
