So glad glad tomorrow is Friday after another long week at work. I am feeling fried after this week and actually had to push myself through a few workouts because of lack of energy and motivation. After running some errands after work, I was feeling pretty lazy when I got home and craving something hearty with protein. So I unloaded my fridge of veggies that needed to be used up and Yves Veggie Dogs I impulsed bought at Whole Foods last week. At only 50 calories each and 10 grams of protein, they seemed perfect for a stir fry.
I know, veggie dogs in a stir fry? Why not?! I chopped and sauteed them with chopped onion and coconut oil. Then added chopped broccoli, shredded carrots, chopped tomatoes, minced garlic and plenty of curry powder to the wok over medium-high heat. After about 10 minutes, dinner was served.
It was a wonderfully tasty and fast dinner and the veggies weren’t overcooked to mush. It’s been a long time since I’ve had hot dogs, but the veggie dogs seemed pretty close in texture and taste. And they didn’t seem as salty as some vegan meat alternative products can be. Even better, the ingredient list was not too scary, I actually knew everything on it!
I’m not a huge fan of vegan meat alternative products, they’re an occasional quick dinner option to share with non-vegan hubby or when I’m just feeling wiped. But I did enjoy them more while transitioning to a vegan diet and have found that most Yves products I’ve tried are good for occasional cravings.

ate morningstar products and boca burgers like crazy about 10 yrs ago but now, never. Just b/c i dont miss them and they are usually full of sodium which for me is a huge no go.
