Our Memorial Day weekend is going wonderfully so far, I’ve enjoyed plenty of down time at home catching up on home projects and spending time with hubby. We even nailed down a plan for our new home office using Floor Planner, a pretty powerful home tool for free! We picked out all the furniture from Ikea and mapped out exactly how it’s gonna fit and look. Can’t wait for the finished room!
Our plans for tomorrow are pretty mellow, no BBQs or parties, but maybe a little gardening and our own quiet BBQ at home and a Memorial Day themed movie. But usually Memorial Day means BBQs and guacamole, a huge weakness for me! I could eat 8 servings in one sitting, dangerous stuff! But it doesn’t have to be. Why not a lighter guacamole packed with more veggies and still plenty of kick?
Raw Zucchini Guacamole
- 1 avocado
- 2 medium zucchinis
- 1/2 medium yellow onion, chopped
- 3 cloves garlic, minced
- 2 tbsp. lemon juice
- 1 tbsp. hot pepper sauce
- 1/4 bunch cilantro, chopped
- 2 roma tomatoes, chopped
- 1/4 tsp. salt
Place all ingredients into a food processor and process to a to a smooth, chutney-like texture. Serve and enjoy! Makes 4 servings.
I used Frank’s RedHot Sauce, but any hot pepper sauce should do.
It smelled wonderful in the food processor, fresh cilantro and onions are always a great combo for me.
I had to try it with my Savory Pepper Flax Chips, match made in heaven!
Obviously the texture isn’t exactly like traditional guacamole, it’s lighter and actually easier to scoop up with veggies and chips.
It does have a creamy texture with a fresh kick, great for serving with chips and veggie sticks, but also a great salad topper or even a chili topper.
If you’re looking for ideas for a BBQ tomorrow, I recommend this as a fabulous, lighter alternative to guacamole.

I love guac but yes, it’s much heavier b/c of the all avo base. i bet the zuke is perfect in it.
and thanks for relinking those chips. totally forgot about those but they will be worth firing up my dehyd for once i get back to S.D.

I love zucchini guac! It is so interesting…but it really cuts down on calories without sacrificing taste. So I end up eating like a cup of it anyway :P
