Going Green

Is it just me or is this week dragging? It feels like it should be Thursday, not Wednesday. Between busy days at work, getting sick, and moving a few mountains at home staving off loneliness while hubby is out of town, it’s been a crazy week so far! Even Leela is looking a little worse for wear.

While Shadow pouts on our bed still waiting for hubby to come home.

Poor guy is crushed without his lap time and will probably settle for attention from me right when I turn the lights out.

I’m on day 3 of my smoothie experiment having smoothies as my main course for breakfast, lunch, and dinner with a little light snacking here and there. The challenge I’m finding is the smoothies aren’t using up enough of my fresh veggies compared to throwing together a huge salad or stir fry. So I had another interesting smoothie concoction for dinner.

Watermelon, tomatoes, a carrot, spinach, sprouts, flax seed, spirulina, and pea protein creating a gorgeous green monster.

That was surprisingly sweeter than I thought it would be and not too earthy tasting.

Smoothies are becoming a comfort food for me having a simple and easy-to-digest meal that’s loaded with nutrients. No, I’m not going to keep this up because I’m starting to miss more solid meals. But it’s nice knowing a smoothie can be a complete and satisfying meal replacement and I wish that crazy guy I see on my commute trying to eat a bowl of cereal while driving would pack a smoothie for the road instead! I do like that not only are smoothies much faster to make, but hardly mess up the kitchen in the process saving me even more time. Tonight I used my extra time in the gym and working on my office re-do project more as well as tackling boring stuff like bathroom cleaning and vacuuming. No wonder this week is feeling long!

    I swear our pets get depressed when my husband is out of town too!!! I hope your week picks up some speed here at the end :-)

    Your weekend will just be that much better when your hubs is home :) So glad though that you’re making progress on the office. I cant wait to see the finished result, or stages of it…i love redecorating and making over spaces!

    I am not a huge of pea protein plain, but mixed with other things I do okay with it. Smoothies are my favorite go to meal for easy digestion.
