It’s over …

Monday that is and finally! It felt like one of those days I just should have stayed in bed. For some reason I woke up very tired even after getting enough sleep, maybe kicking out the last of this cold? Then I was running a little late this morning and got a work call while getting ready and chugging a smoothie. And it was non-stop as soon as I arrived at work with a major server crash, people out sick and training. On the bright side, the day flew by. But I was seriously yawning on the drive home and fuming at how much I just spent to fill the little tank on my car. Really!?! When I got home, I had a mess to clean up in the kitchen and a dishwasher to empty before I could get creating for dinner. If I wasn’t so hungry, I would have just done this on the couch.

I was craving comfort food that came together quick, something like steamy, tomato pasta. So I spiralized two zucchinis.

And threw together a thick, chunky marinara sauce in the Vita-Mix.

Then I crumpled and crisped some tempeh in a little olive oil over medium heat.

Then added the marinara sauce and zucchini noodles and simmered for about 5 minutes, then mixed in some nutritional yeast.

And served for a very fast comfort meal.

It hit the spot being warm, savory and filling. The crumpled texture of the tempeh added a nice, nutty flavor that absorbed the garlic and basil flavors in the marinara perfectly. It’s probably my new favorite dish to use tempeh in and that’s saying a lot!

    That dinner had to make you feel better, yes?!

    I actually had a great Monday. After several weeks of work drama, plus a huge project deadline last Friday, Monday felt awesome. Yes, I was super-busy, but doing “normal” stuff. No stress, no deadline, just TCB!

    Hope today feels the same ;)

    Your day….ugh. Glad you survived it. I am still sick and would have loved to just stay in bed :)

    The noodles, sauce, and temped sauteed…all perfect! I can see how this would be SUCH a fast meal. Especially if you didn’t have to stop 17 times and take a picture of the steps and stages for blog purposes. lol

      So sorry you’re still sick, I think mine is totally gone – finally! I hope yours is soon too!

      So true on taking pics for the blog, but I can do it much faster now. :-)

    i have to pick my man up at the sac airport and i was wondering if there are any cool juicebars or raw resturants to check out while im waiting,,, im going to be getting there a few hours before him…..so i will be in downtown sac while i wait ;..

      Touch call on Sac, most of the good places in the airport food court are in the terminal past security unfortunately. In Sac, there’s a great place called Sugar Plum Vegan in midtown for fabulous vegan options and they usually have at least one raw option. There’s also The Green Boheme, an all-raw vegan place in Sac.
