Happy Friday! I am so ready for the 3-day weekend! Especially since it rained all day again today, but a little sunshine is in the forecast. To start the weekend, I grabbed a new beer I picked up at Whole Foods last weekend, Pete’s Wicked Strawberry Blonde Ale, and it’s pretty good! It has a slight strawberry flavor, but not too strong to be considered sweet, girlie beer.
I also tried a new dog food on Leela I also grabbed at Whole Foods, V-Dog, mixed with her regular food.
I wasn’t expecting it to be a hit because she’s not a fan of dry dog food or dry treats. She did eat a few pieces, but left most of it in the bowl and dropped a few pieces on the floor while separating out her regular wet food. :-P I guess I need to try soaking it in water or veggie broth to be softer for her next time. That or look for a vegan wet dog food.
For dinner I dug my spiralizer out to try spiralizing some of the pathetically small zucchinis I had.
It worked, but I got a lot of noodle bits. I can’t wait for zucchinis to be in season here and the monstrously huge ones can be purchased from farmer’s markets.
Anyway, I made Gena’s Alfredo sauce using hemp seeds instead of cashews because I didn’t have cashews and I like the higher protein content in hemp seeds.
It coated the salad nicely for raw zucchini alfredo for dinner.
I added a few dill sprinkles to the salad for a little more flavoring and it went very well with the sauce.
My weekend is shaping up to be pretty busy with another long run, massage, dinner out with my sisters and maybe a little shopping. Truthfully I’m looking forward getting the half-marathon over with, training in the winter weather here has been challenging without access to a treadmill and scheduling long runs over the weekend it not easy since they can be so time-consuming and energy draining. It’ll be nice getting back to a less-intensive running schedule.
Any plans for the weekend? Do you get Monday off?

We have used V-dog. Our new dog Ellie had to get adjusted to dry food. We just mixed in some wet canned food at first and she got used to it. You can wet the food down too. A good canned vegan food is Natural Balance vegetarian. You could also cover the kibbles with this gravy recipe from my friend who is an EXPERT in all things vegan dog.

That salad looks so nice and creamy.
Thanks for the info, I will check out Natural Balance and that the gravy recipe because the V-Dog pieces seem to be too big and tough for her little mouth.
Sounds like you have a great weekend planned, I think ‘Massage’ would be my fave part!!!
I hope your pup likes the food when you try again, maybe watering it down will help ; )
Have a great weekend!!! Mike works Monday and Anthony has school (snow makeup day )
<3 xoxo
That’s my fave part too. :-) My hubby works Monday too, but I’m looking forward to a little girl shopping time.
Oh no, do I need a spiralizer? LOL (wonder if my mandolin can do it?) The salad looks delicious.
Yep, 3-day weekend and I’m thrilled. Hope to find a balance in getting things done around the house (Dave is a very equal partner in household chores so his cast/surgery has thrown my for a loop — I can’t keep up with everything!) and quiet time for writing and reading. Fingers crossed.
I actually won that spiralizer at my first raw class nearly two years ago and I love it. But I tend to use it more in the summer for fun noodle salads to take to family gatherings. It’s great for zucchini, yellow squash, butternut squash and cucumber.
I need to tackle a few chores too, hubby will be stuck trying to fix an oil leak on his car. Poor Dave, he must be frustrated. But I hope you get your quiet time!
oh your dinner looks so good. i know the rain has been crazy! and yes i get monday off-yay! enjoy your massage…….
I’ve been wanting to try this with hemp seeds…it seems like nutritionally more what I’m looking for than cashews.
Looks like the variety of veg with the zucchini noodles is good too!
well, i didnt know monday was a holiday until i just read this. blah. im working it.
my spiralizer is collecting dust. thanks for the reminder.
My spiralizer has been too, I usually use it a lot over the summer and forget about it during the winter.
I can’t wait to try out my new spiralizer! That’s just so awesome.
No Monday off for the self-employed here. :(
i need a spiralizer~ i keep seeing everyone use them and am always jealous!
I’ve often wondered about vegan dog food – I don’t have a dog but I plan to in the future. I would of course want to feed a dog only vegan food, but I’d be worried about depriving them of what they really want. Your dog seems quite healthy, though, and I suppose it they aren’t exposed to meat they’ll never know the difference!
From what I’ve read, dogs can do okay on a vegan diet getting most of the nutrients they need. Cats are another challenge though primarily being carnivores, so I haven’t tried vegan cat food on mine yet because the food is pricey and hard to find. But that’s something I plan to work with more in the future.
I’ve been rocking my spiraliser lots lately, I find it is always hit and miss. What other veggies did you put in the ‘salad’ for the alfredo? Oh and our zucchinis here are ALWAYS pitiful. That’s what you get for living in the desert right?
I put shredded red cabbage, chopped red peppers, chopped tomatoes and shaved carrot ribbons for a good combo. Our zucchinis are the same way here now, even the ones at Whole Foods are pathetic.
