Sweet Potato Fries & Getting Lazy

TGIF! And a snow-free Friday here! This morning was crazy with rain and 40-mile wind gusts, but that cleared up by the afternoon and never turned into snow as predicted. I’m a little bummed, seeing snow here would have been pretty wild, but oh well. Since it’s still freezing cold here, Smokey parked herself in front of her favorite show – the fireplace. She’ll sit there for most of the night just watching the flames completely mesmerized – I wish I was so easily entertained.

Maybe after a few more glasses of this, I will be. Red wine with frozen grapes in it – perfect way to end a busy week.

We thought about going out, but it’s freezing and the couch and fireplace just seemed to inviting. So a relaxed dinner at home it was. I decided on a splurge food – sweet potato fries. I chopped one huge sweet potato into fries, tossed with a little coconut oil and salt. Then baked at 400 degrees for 40 minutes.

One sweet potato makes a lot of fries!

To create a dip for the fries, I mixed a little Veganaise and honey mustard and it was fabulous. I served the fries with a thrown-together salad of zucchini ribbons, romaine lettuce and red cabbage dressed with a honey mustard miso dressing and topped with hemp seeds.

A laid-back and simple dinner, perfect since we’re so relaxed this evening watching TV and sipping wine. Pretty lame on a Friday night, we’ll make up for it tomorrow. :-)

    Red wine with frozen grapes in it = NICE

    and yes, one huge sweet potato just keeps going and going and going…when you’re chopping it into fry sizes pieces. And my hand strength sucks and I swear i nearly take off fingers every single time i try to chop a sweet tater. I hate that chore. They are such hard rocks when raw!

    Worth it tho. Your fries look perfect! I need that roasting rack as i bet your fries are perfectly cooked.

    Great dippage choice, too!

      True, sweet potatoes are tough, but chopping this one wasn’t bad with my new and super sharp santoku knife. Still, I have one more sweet potato left and I think I’ll try the baked rounds with it. :-)

      The Veganaise/mustard dip was wonderful, those two make a great combo mixed together. Only a little Veganaise is needed to add a rich, creamy texture to the honey mustard.

      It’s funny, this morning is perfectly clear, not a cloud in the sky, and they’re still predicting snow for the Sacramento area today!

    I’ve never seen frozen grapes with red wine before – what an interesting idea!
    I must say I can be entertained by staring at a fir for quite a while :)
    Those fries look great, they’re inspiring my to dig out the sweet potatoes I think I have in my pantry somewhere!
