Chickpea Tofu Curry & CSN Giveaway!

Today’s weather was officially icky – cold, rainy and windy. And it may be followed by snow tomorrow and Saturday! That’s gonna add some complications to my 11 mile run this weekend! But I’m still looking forward to the weekend even if Saturday will be spent parked in front of the fireplace. It’s hard to stay high raw on a day like today, but I did for breakfast and lunch with a smoothie and a salad. However, I needed something hot for dinner and still have a huge block of high protein tofu and soaking chickpeas to use up in my fridge. And for some reason I crave curry and spicy foods in icky weather. So this is what I came up with for a 15-minute one-pot vegan meal.

Chickpea Tofu Curry

  • 1 cup dried chickpeas, soaked overnight (Or 1 can)
  • 12 oz. of pressed tofu, crumpled
  • 1/2 bag of frozen corn
  • 1 zucchini, chopped
  • 1 onion, chopped
  • 1 clove of garlic, minced
  • 1 tbsp. curry powder
  • 1 cup fresh baby spinach leaves (frozen would be okay too)
  • 1 tsp. dried basil
  • 1 tbsp. coconut oil
  • Salt and pepper to taste

In a large skillet,  saute onion in coconut oil until translucent. Add corn, zucchini, garlic and curry powder and saute for about 5 minutes. Stir in chickpeas, tofu, basil and spinach. Cover and simmer for another 5 minutes. Serve and enjoy. Makes 4 servings.

If you’re not into tofu, that could be left out or subbed for another veggie, I was just craving something hearty and higher in protein. The curry flavor was wonderful, not too strong, but still rich and savory. The tofu looked more like scrambled eggs, but added a nice texture contrast to the chickpeas. So, need a fast weeknight meal? Try this.
