Fennel Pepper Soup for One

Hooray for tomorrow being Friday! I am ready to end this week and look forward to a relaxing weekend. I spent too much time today spinning my wheels on a software issue at work with frustrating results and too many other deadlines to meet. I hate stressful days at work, it can be so hard to leave those problems at work. So I’m working on a new playlist for an intense cardio workout to blow off a little steam and forget the frustrations of the day. Plus I’m adding a Bob Marley playlist to my iPod for tomorrow at my desk, I have a craving for reggae lately thanks to the warming weather and need to mellow out a bit.

For lunch I had my black eyed peas leftovers.

They’re just as good the second day, maybe even a little better since the beans absorbed more of the flavor.

Since I’m on a fennel seed kick, I got experimenting on a new raw soup for dinner.

Fennel Pepper Soup for One

  • 1 red bell pepper, roughly chopped
  • 1/2 clove of garlic
  • 1 tbsp. lemon juice
  • 1/4 cup hemp seeds
  • 1/2 water
  • 1 tsp. fennel seeds
  • 1/8 tsp. dried thyme
  • 1 tsp. pink salt

Blend all ingredients in a blender to a smooth puree and enjoy.

It worked out well, fennel seed goes nicely with red pepper flavors with a sweet and savory combo.

    ok this is really random. I left you a long comment yesterday but it’s not on here now. It was a kinda random comment that perhaps was not necessarily the type you wanted up :)

    Anyway, fennel seed soup. love it. Thanks for those links to Kristen’s and i just made some crackers. But they dehyd process takes forever! Ugh. That’s why I dont do it more often.
