More rain and wind today, not a good day for hair. I gave up and went with a bun today, naturally curly hair tends to turn into one big knot in this weather. I survived another trampoline aerobics class last night and felt much better and more energized after. Thankfully, I’m not sore today … yet. Tonight is just 45 minutes of cardio and my usual ab routine. Think I’ll play a little DVR catch up during, have a few episodes of The Middle, Modern Family and Cougar Town to watch. I apparently need to get into The Bachelor too because tons of people at work and many blogs are talking about it, I feel so out-of-touch :-P But, we also get to catch up on Lost tonight, I was too wiped after class to watch it last night.
I recently read a review of Ubuntu in an Oprah magazine where the author stated she’s from the south where vegetables are cooked beyond recognition and/or slathered in mayo to the point where there’s more mayo than actual veggies. Living in Florida, I got exposed to a lot of southern cooking and have to agree – cornbread, canned green beans cooked to mush, green sludge that was possibly once collard greens, mayo loaded coleslaw served as dainty sides to 18 lbs. of BBQ. And somehow bacon bits were sneaked into everything, I swear even the ketchup. Okay, maybe not that bad, but close. There were some decent recipes too, like a broccoli and grape coleslaw that my MIL frequently served – very similar to this recipe. Granted, it was covered in mayo and sugar and chopping the broccoli to tiny bits was no easy task, but the fruits and veggies in it were raw and recognizable. My MIL complained about this recipe due to the time consuming chopping, she even went as far as to cut the grapes in half. Truthfully, I was not a huge fan of grapes with broccoli, but liked the idea of a creamy broccoli slaw-style side dish with some color and flare. And I particularly like letting my food processor do a more efficient chopping job than I ever could.
Raw Southern Style Broccoli
Sauce
- 1 cup soaked cashews
- 1 zucchini, chopped
- 2 tsp. rosemary
- 2 tbsp. lemon juice
- 1/4 cup water
- 3 tbsp. nutritional yeast
- 1 tsp. salt
- 1/4 tsp. cayenne pepper
- 1/4 tsp. turmeric
- 1 sprig of chives (optional)
Blend ingredients in a high speed blender until smooth.
Broccoli Slaw
- 4 cups chopped broccoli
- 1 red pepper, chopped
- 1/4 cup chopped green onions
Process broccoli in a food processor until nearly a rice-like texture. Pour sauce into the food processor and pulse until well blended. Put mixture in a large bowl and stir in diced red pepper and green onions. Warm in dehydrator at 115 degrees for 20 minutes if you’d like and enjoy. Makes 4 servings.
It made great leftovers the next day either as a side, veggie dip or salad topping. I’m keeping this one for when I get tasked with a side dish for our next family gathering, it could easily stand in as a main when other raw selections are limited.

I love this broccoli casserole idea. I’m from SC, and of course, people here love Southern food. I like some of it such as mac n cheese and fried okra! But country fried steak??? NOOOOOOOo Way will I eat that.
