Broccoli Hemp Seed Pesto

Today is kind of a blah Thursday, I feel like I’ve been dragging since donating blood Tuesday, pushing myself through regular chores and working out. My weight teeters on the edge of different amounts of blood they take and towards the end of my donation, the nurse says after looking at my whitening face, “Are you sure of your weight? If it’s just a few pounds lower, we may be taking too much.” Not a good thing to say when there’s a huge needle in my arm! I ended up having to stay an extra 15 minutes for observation in case I passed out while nurses kept offering me Oreos, Sprite and Teddy Grahams (ugh) – thankfully I did not pass out. But now I know to subtract 5 – 10 pounds from my weight when filling out blood donation paperwork and have been upping the greens in my smoothies for iron!

Anyway, I was craving something hearty with a lot of garlic for dinner and got experimental with broccoli and hemp seeds.

Raw Broccoli Hemp Seed Pesto

  • 2 cups chopped broccoli
  • 1 large garlic clove
  • 1 tsp. pink salt
  • 1 cup basil leaves
  • 2 tbsp. olive oil
  • 2 tbsp. lemon juice
  • 1 cup hemp seeds

Process all ingredients in a food processor except the hemp seeds. Pour hemp seeds into the food processor while rest of the ingredients are being blended. Serve as is or warm in a dehydrator at 115 degrees for 30 minutes before serving. Makes about 4 servings.

I served as a side like rice, but it can be piled onto a salad or served in wraps. A great way to punch up raw broccoli and make it a heartier main dish and in the running for my favorite raw broccoli recipes! It’s also a good recipe to use the broccoli stock in as well, I chopped it into chunks and let my food processor blend the chunks into the mixture adding to the texture. What can’t garlic, olive oil and hemp seeds make better?

Now I need to motivate myself to hit the gym before I crash hard again tonight!

    First of all thanks for the shout out. This pudding was delicioso, but I totally have to try this broccoli recipe. What a great idea. Ingenious.
