Happy Monday! Here’s yet another interesting article on junk food and depression that makes me wonder if the depression causes more junk intake or more junk intake leads to depression. On a less serious note, my excess Halloween candy disappeared at record speed today at work! You’d think everyone would be sick of it after Halloween weekend, but it was also a stressful day and maybe a little chocolate therapy was appealing. I’m looking forward to more kitchen time to test and review more toys this week, get crazier with smoothie experiments and try more of Jennifer’s recipes. For tonight, I’m trying another broccoli soup recipe in a Vita-Mix and this one is more a meal or main dish recipe because of the amount of nuts and avocado.
Recipe: Creamy Broccoli Soup
Summary: Broccoli, cashews and avocado make this a creamy, hearty soup.
Ingredients
- 2 cups water
- 1/2 cup raw cashews
- 1 cup chopped broccoli
- 1/2 avocado
- 1/2 garlic clove
- 1 tsp. onion powder
- 1 tsp. pink salt
- 1/8 tsp. cumin
- 1/8 tsp. black pepper
Instructions
- Blend all ingredients on high in blender until smooth, about 3 minutes.
The first time I tried this, I used a whole, large garlic clove and it was way too much. Much better with just a half a clove. The cashews and avocado add a smooth, creamy texture that’s filling. You could up the cumin for a little more spice if desired.
