Red Pepper Soup

I had a sad thing happen, I cut open a giant spaghetti squash for dinner, but found the insides rotten. Such a waste, I hate that! Oh well, have to try another raw soup tonight. I decided to try one using up one of the red peppers sitting in my fridge and ended up modifying the recipe with more spice:

Recipe: Red Pepper Soup

Summary: Red pepper blended with oregano make a simple, tasty soup.

Ingredients

  • 1 red pepper, chopped
  • 1 medium avocado
  • 2 cups water
  • 1/2 cilantro bunch
  • 1 tbsp. oregano
  • 1 tbsp. pink salt

Instructions

  1. Blend all ingredients in blender to desired smoothness and serve.

I served this chilled and I think that brings out the pepper and cilantro flavors best. It’s a simple, tasty soup that may not have the most appealing color, but the flavor makes up for it.
