Today our weather finally started showing signs of fall, temps in the 70s, overcast with a nice breeze, which was very refreshing after triple digit heat over the weekend. Northern California weather has been crazy the last couple of years … I blame global warming :-P Anyway, when winter is in full force, we get a lot of dark, cold nights. Last year we practically lived on hot soups, stews and chilis, the slow cooker was my friend. But, it won’t get as much use this winter while I try more raw recipes. It may force me to finally sink $500 into a Vita Mix just so I can warm raw smoothies and soups. Until then, our mid-range KitchenAid blender is still kicking it and did a wonderful job with this cilantro soup recipe:
- 1 Chopped Avocado
- 3/4 Cilantro Bunch
- Half a Large Lemon Juiced
- 1/2 Tsp. Salt
- 1 Tbsp. White Miso Paste
- 1 1/2 Cups Water
Blend ingredients in blender and serve. The cilantro seemed more chunky/grainy, not a fine blended paste that a Vita Mix might produce, but I liked the texture and enjoyed the strong cilantro flavor.
