Crazy that July is over, summer is almost over, and this year seems to be flying by. We’re hanging in there, sweet Miko has been coughing more and more challenges giving him his heart medications this week. Ron and I are constantly having to get creative with new foods we can hide his meds in and fall back on crushing the pills and using a mouth medicine syringe when nothing else seems to work. He has a follow up vet appointment in a couple of weeks with a cardiologist we’re hoping goes well.
I’ve been eating out a lot this week with Ron and family celebrating my birthday, I stepped out to Saladworks with my dad to try a monster vegan salad and having more simple salads at home along with delicious beans and rice.
There has also been more simple garden zucchini dishes, stepping out for Friday night Thai, and a delicious Amy’s Vegan Supreme Pizza which was wonderful with the crust being the perfect balance of thin, crispy, and soft.
We also stepped out to Midtown Sushi last weekend for their creative vegan sushi options which win the Sacramento Vegan Chef Challenge regularly.
And I met my mom and sister at Himalaya Vegan Organic Restaurant today, I have been meaning to get there since they opened a few months ago. What is great is they have a very simple daily menu of seasonal dishes that are vegan, organic, and gluten free. You can either order a regular or small plate and order a slice of pie if you still have room after.
It was a wonderful blend of healthy plant foods and flavors, very filling while not being too heavy and I can’t wait to go back.
Sunday blues are here and I am facing a tough week ahead moving forward with a job transition as I notify the rest of my team and co-workers which won’t be easy, adulting is often not. But hopefully it will all be worthwhile when the dust settles. And this list is a great way to start your week.
