TGIF! Even the insanely cold, windy and wet weather couldn’t bring down my giddiness that it’s Friday because what a busy week it’s been! But I am a little bummed that a run probably won’t happen since there are rain, wind and flood warnings for the entire weekend. After a few days of this weather, I start craving hot comfort food. But I went with salad wraps for lunch instead. I took leftover salad from last night and wrapped it in collard greens smeared with Veganaise.
They were tangy, creamy and a fun way to eat leftover salad. The orange ginger dressing worked with the Veganaise nicely. And perfect with a piece of leftover socca and almonds for a hurried lunch.
After work, hubby and I were feeling pretty lazy after our crazy weeks. We thought about going out, but the weather was awful and we were comfortable parked on the couch with lap cats. As soon as we decided to stay in, I jumped up to start creating in the kitchen. Funny that I can be so relaxed, then suddenly so motivated when it comes to recipe experimenting. And so focused that I hardly noticed hubby snapping away in the kitchen.
And it’s Friday, so why not a beer? :-)
I decided to throw together the soup base from my Creamy Chickpea Chowder. But didn’t have chickpeas to add this time, so I doubled the hemp seeds to make it more hearty. For the veggies, sauteed onion, asparagus and carrots in a soup pot before pouring the soup mixture over it.
It didn’t exactly look attractive in the pot, but it smelled wonderful. I added frozen chopped spinach to it also for more veggie variety. And adding frozen chopped spinach is a great way to cool hot soups down when they’re too hot to eat.
In about 20 minutes, I had a quick, creamy and hearty vegan veggie chowder that hit the spot after a day of running around in chilly rain and learning that my boots weren’t waterproof.
But I was still craving dessert. So I threw frozen banana chunks, almond milk, lucuma powder and cacao powder into the Vita-Mix for quick banana soft serve. I wasn’t following a recipe or even measuring, that’s too formal for a chill Friday evening at home! Luckily it came out perfect!
