Today really seemed to drag by, I think I’m still coming down from such a loaded weekend and wanting to be outside enjoying the heat. It finally feels like summer is here and I’m ready to plunge in with some fun plans like wine-tasting trips, Tahoe hikes, beach trips, etc.
Someone spread take-out menus all over our department today for a new cafe that just opened nearby. I grabbed one assuming there would be vegan-friendly options in it considering the skinny beach girl featured on the front and being named after a female character from Gilligan’s Island. There was nothing! It was all omelets loaded with meat, eggs and cheese, pancakes piled with cream and sugary toppings, like 48 different meat-loaded melt sandwiches and salads that would be pathetic and unsatisfying once vegan-ized. Even the vegetarian options were weak. To me it seems like veganism is growing from blogs I read and all the negative publicity animal products are getting industry-wise and health-wise, it’d be nice if more restaurants offered good vegan options.

Apparently I was craving salads today and lots of it. For lunch I created this using the leftover Red Bell Pepper Kream sauce from last night as the dressing and topped with hemp-esan.
Kale, carrots, red cabbage, tomato and red bell peppers. Ani’s kream sauce made great dressing that coated the salad nicely.
And I did another salad for dinner at home. What’s sad is it’s similar to my lunch salad sort of.
For this one I free-handed a different version of The Gena Divine, the salad is chopped kale, carrot and zucchini ribbons, sauerkraut and red cabbage. For the dressing, I put fresh lemon juice, tahini, fresh ginger, an avocado and a few tbsp. of water into the Vita-Mix to create a creamy tahini avocado dressing. After thoroughly coating the salad with it, I sprinkled kelp granules on it and wow, it was really good!
I’m still resting from running after Sunday’s race, but I got the wild idea to break out these for a little exercise tonight.
I spent so much time on these in high school. Remember when Rollerblades first came out – 1989? They were $200+ and I saved up for months for a pair, not easy on a junior high babysitting allowance! I was also in a skate group that met every Friday night just to blast car stereos, skate and try new tricks. Living in a sleepy, beach-side Florida town at the time, there wasn’t much else to do. :-P Good times. What was your favorite form of exercise in high school?
