It feels like Tuesday, but it’s Wednesday already! I could get used to this. It’s day 2 after the 5K and I’m hardly sore at all. That rocks considering I was really sore last year, progress is great. :-) This mornings green monster had carrots, an apple, spinach, hemp protein powder and a fresh chunk of ginger.
Very good, I’m a fan of fresh ginger, the flavor is so bright and crisp for me, perfect to start the day. This also held me nicely for 4 1/2 busy hours at work before lunch.
For lunch, I remixed my nacho salad leftovers by adding spinach and sprouts to bulk the salad up a bit and topped with hemp seeds.
Mmm, the fresh watermelon and cantaloupe went nicely with it. But I found myself hungry for an afternoon snack, good thing I tossed an apple in my purse this morning.
I’ve been a little careful about my protein with the extra physical activity over the last few weeks and opted for a non-raw vegan dinner tonight trying another new tempeh flavor.
I also had a fresh pineapple that needed to be eaten, so I created a stir-fry with tempeh, red peppers, cauliflower, broccoli, red onions, red cabbage and fresh pineapple chunks. I actually wanted to add bean sprouts too, but figured I had enough veggies since the wok was practically overflowing. :-) For the seasoning, I used fresh minced garlic and shoyu, then just simmered a bit to distribute the pineapple flavors.
Turns out pineapple goes very well with tempeh and I liked that the tempeh crumbled a bit in the cooking process, it distributed a crunchy, nutty flavor over the veggies. So a pretty quick and simple dinner, but tasty and high in protein.
In high school, I worked as a supermarket cashier and I remember a co-worker, an older lady in a sad situation battling cancer and in debt with medical bills and considerably over-weight. While she was checking a customer next to me buying a ton of veggies, she commented that she’d eat more if someone cut them up for her, it was the preparation of fresh produce that she despised. So strange to me now considering I chop tons of veggies every day and think nothing of it, it’s habit – just what you do to eat fresh foods. I guess in my not-so-healthy days I felt the same way and viewed it as a super time consuming task. But not now, I chopped a lot for this dinner and it took less than 15 minutes … going through a drive-thru takes longer and more effort in my mind. Does preparing fresh produce bother you?
