Happy Monday, I hope it’s being good to you. I’m feeling pretty good after yesterday’s race PR, hardly sore thankfully. After all the random sampling at the festival though, I was craving a lot of green veggies for dinner last night and created this super salad.
Spinach from our garden, red bell pepper, cauliflower, red onions, carrot ribbons, zucchini ribbons, tomato-avocado-basil dressing, hemp-esan and sunflower seeds. Very filling and satisfied my green craving. As the leftovers did again for lunch today.
After I took my chihuahua and my mom’s over-stuffed football of a chihuahua for a nice long walk.
They enjoy the simple pleasures in life like shoving their noses in everything for extended amounts of time. I still wonder what my dog gets from smelling the same grass spot for 5 minutes. I let them take in all the smelly goodness today.
For dinner I cracked open Ani’s Raw Food Essentials to try some new recipes, her Kream of Broccoli soup topped with Red Bell Pepper Kream.
Crazy colors, after being stirred it looked like something from the set of Double Dare. Cool that natural foods can produce such bright, vibrant colors. I served it with a steamed artichoke and Ani’s Mushroom Gravy for dipping.
Artichokes are one of those veggies that I hated as a kid, but absolutely love now. Only I’m not a huge fan of them raw, rather boiled, steamed or grilled with a little olive oil. And the mushroom gravy paired perfectly for a dip. Artichokes aren’t cheap, about $3+ each currently for the big ones. Totally worth it, a large one equals two servings when sliced in half and they’re a fun veggie option. Plus I love eating the artichoke heart once all the leaves are cleaned, it has a distinct hearty flavor that is so great by itself. I’ve got artichokes planted in our garden this year and a cute little one is already forming. Anyway, the entire dinner was a very good combo.
I decided to tally up the various raw foods I’ve eaten today and oh my!

Wow, I guess I reached my 5-a-day … for the next week! :-) It looks like an insane amount, but many were salad and smoothie ingredients. Also I’ve used my Vita-Mix 4 times today:
- Breakfast smoothie
- broccoli soup
- red pepper kream
- mushroom gravy
Before going raw, I would have never imagined that I would be using a blender so much. Definitely the Vita-Mix has been my most useful appliance with the food processor coming in as 2nd.
