Whew, made it to the long weekend! And so far today the weather is beautiful, sunny and just a little cool. I’m thinking of going for a run here shortly for one last training session before Monday’s 5k race and to try my new running pack with a water bottle, the Profile-Lite 16. I had to invest in one big enough to hold two cell phones since I’m on call this weekend, but I’ll be making use of it a lot more this race season as I set my sights on a half-marathon in the near future.
As usual I had the opportunity to sleep in this morning, but woke up wired at 6 AM instead. We crashed a bit early last night after a busy week and more and more I’ve been waking up full of energy after just 6 to 7 hours of sleep since upping my exercise schedule and going high-raw. I love it though, having more energy-filled hours in the day means more time to get stuff done and to play. Currently I’m enjoying a quiet house catching up on blog reading and posting while hubby sleeps in.
I’m kind of spoiled for my work lunches, my mom lives a few blocks from my job and is usually home during my lunch hour because of her nursing schedule, so we often combine leftovers for cheap, healthy lunches at her house. Yesterday we had my leftovers of creamy hemp cauliflower and a sauerkraut salad topped with hemp-esan.
Good, healthy, filling and cheap – the way I like it. :-) I’m becoming addicted to hemp-esan and actually think it tastes better than Parmesan cheese because of the seasoning options when creating it. Plus it’s easier, no grating or nut grinding needed and it stores nicely in a jar in the fridge for awhile.
Our department got to leave a little early yesterday to start the long weekend which was nice, I used the extra time to bang out some shopping. But, since I’m on call this week, I got a interruptions while scanning the clearance racks at Sports Chalet and stocking up for the weekend at Costco. That will be a nice over time check. :-) Anyway, I loaded up on a few essentials at Costco.
I’ve been depleting the spinach in our garden and decided to supplement it this week. This huge container is only $3.50 at Costco currently versus $5 at Whole Foods.
Two huge watermelons, Costco had these bad boys on sale for $4 each for the Memorial Day weekend and it will probably take me only a week to eat both. :-)
My husband has become a huge fan of frozen banana ice cream whipped in our food processor. So I’ve been buying a lot of bananas at once to let them get really ripe, then peel, slice and freeze them for smoothies and ice cream. At only $1.30 per bunch, not only is it much healthier ice “cream”, but much cheaper too.
Some pantry staples. I’ve been meaning to work more with quinoa, Ani Phyo has some great recipes and instructions for sprouting it in her new book that I’m hoping to try this week. The raisins are for an experimental cookie recipe I’m hoping to try this week too using almond milk pulp.
Last night hubby was craving Chinese food, we haven’t been to a Chinese restaurant in ages so we decided to check out a local place. I was pleased to see good vegan and vegetarian options.
I tried the Szechuan Bean Curd because my appreciation for spice and heat has grown quite a bit since going high-raw vegan.
Basically fried tofu, zucchini, carrots, onions, water chestnuts and bamboo shoots in a spicy pepper sauce, very good and just the right amount of filling. I skipped the rice as a side and just enjoyed as is.
Anyway, got a pretty busy day planned today that includes running, shopping, race packet pickup, possibly dragging hubby to a raw restaurant in Sac and whatever else I feel like. :-) I hope everyone is having a great weekend so far!
