More Easy Meals

Rain, rain, and lots of rain! It’s pretty much supposed to rain non-stop through Sunday … maybe even longer. Not a bad thing, we need it! But we’ll be seeing possible lightening storms on my 18-mile run day and I may be heading to the gym for that one. Boo, guess I’d better start finding a good audio book now! And Miko hates rain with a passion, he refuses to step out in it and has been restless.

Okay, this entire post could be an add for Trader Joe’s because I’ve been relying simple veggies and whole ingredients for easy meals this week. I’m dragging with so much going on at work and busy training schedule, so organic ready cabbage and greens are great for salads.

So are canned organic beans for making simple salads a meal salad.

And mixing a simple blob of hummus with apple cider vinegar and tamari in a bowl to taste for a dressing.

Toss the mess together in a large bowl.

And a simple, filling, and delicious meal salad is ready!

Then there’s simmering chopped tempeh with chopped sweet potato, green beans, and broccoli in a wok.

And adding organic marinara sauce for an easy one pot meal ready in minutes.

Yum and the leftovers are great chilled over salad greens or heated over rice.

Simple, whole food meals are possible when things are crazy!

    Too bad about the lightening. I love running in the rain and hate the treadmill. I don’t know how you do it? Poor Miko, my dogs felt the same way this week because we had so many cold and rainy days.

      True, playing it by ear until the very last minute and hoping the storms won’t happen until later in the day maybe. The treadmill has is perks for training runs, I can control hills and pace more while zoning out to podcasts. But still not exciting for long runs.

      I wish I could, we got tons yesterday and looks like it won’t be so heavy today.
