The heat is getting a little crazy here this week, multiple days of triple-digits. And it seems to be getting to this guy!
He wanders the halls meowing from boredom I guess, or anger that Miko cleaned his food bowl again. Or he tears around the house like a mad man for no apparent reason. I had to bring out the big guns to get a little peace for dinner, a catnip puff ball.
Such a simple toy equals hours of fun for him and a lack of sleep for us if I don’t remember to hide it before bed.
And I was keeping it simple with dinner too with a favorite recipe of mine from Kristen Suzanne’s Ultimate Raw Vegan Hemp Recipes book, the hemp seed nacho dip.
I’ve made it so many times the book is permanently warped to open to that page. It’s actually supposed to be a nacho dip, but I adore it as a creamy salad dressing with a little spicy flare while being a good protein and nutrient source of course. :-)
And it takes just minutes to toss the ingredients into the Vitamix and blend to a creamy perfection. Tonight I simply coated Julienned carrots and zucchini in the sauce.
And ended up with a pretty gourmet looking dinner in less than 15 minutes – my type of Monday night meal!
The sauce makes the book worth it to me alone, but there are other hemp recipes I regularly make from her book too such as the creamy curry sauce, salad dressings, desserts, and even flavored hemp butters.

I’ve made that hemp nacho sauce many times too. Easy and delicious. I should take another look at that book for other recipes.
