This week at work continues to be non-stop, today was just a blur of insanity due to being short handed and many projects popping up. What I can’t stand about weeks like this is just feeling shut down, too fried to do anything I want when I get home and no free minutes at work just to catch my breath. But days weeks like this make me thankful for many things, like staring at lazy pets to get relaxed.
A loaded pantry.
Nutrient packed smoothies to start the day.
Monster salads full of fresh veggies.
Getting an invigorating face massage in the morning.
Stylish and functional fashion.
And chocolate cake – which I need to make this weekend!
And, of course, leftovers for throwing together another simple dinner tonight. I had plenty of leftover broccoli pate from last night and collard greens, so I made something like raw burritos.
I smeared Vegenaise on the greens, then layered on broccoli pate, sprouted mung beans and a perfectly ripe avocado for a dinner that came together in 5 minutes.
Not exactly fancy, but tasty, fun and not stressful. Raw pate leftovers are great to remix in nori rolls, wraps, salads, or even smearing on crackers and breads.
Now I’m gonna be thankful for something else to take to a bubble bath.

I especially love the bath and wine! When Mike and I get a house, we want a huge jacuzzi tub so we can light candles and drink wine !
