Whew, another day of crazy weather! It rained with wind gusts up to 70 MPH all day which made it interesting. But also a great day to go to Costco … sounds crazy, right? But our local Costco is always insanely crowded, going on the weekends in a huge sanity test for me and I don’t have kids in tow. I can deal with a little wind and rain and would rather do so than huge crowds aggressively charging for the free samples. Since not too many people enjoy Costco in this weather, I zip up my raincoat and load up usually on produce, nuts, frozen berries for smoothies, foods for hubby, shampoo … whatever we need 80 lbs. of. :-)
When I got home, the sky actually started showing itself just in time for the sunset. And now it’s windy and rainy again.
The chilly weather means Shadow spends extra time on hubby’s lap.
He’s so cute waiting on the couch for hubby to get home, the highlight of his evening.
For dinner tonight, I think I was channeling spring/summer weather with a bright salad. Since I had plenty of carrots to use, Gena’s Carrot Miso Dressing just sounded perfect.
I love the bright color and sweet and savory flavors.
And a perfect color combo for my bright salad. Since I still had leftover sprouted lentil crumbles and roasted brussel sprouts from last night, I threw them into the salad too for another way to remix leftovers.
It made a great dinner salad, the lentil crumbles were like crunchy croutons.
Even though it was cold and icky outside, this cold salad tasted great to me and let me imagine for just a few minutes that summer was here. And if I keep eating this many carrots, I’ll have a nice golden glow when it does finally get here. :-) I highly recommend trying Gena’s dressing, it’s a flavorful, yet lighter dressing that coats and brightens a huge salad nicely.

Fave dressing is vegenaise + sugar + ACV. Seriously, i could drink the stuff. lol

I’m really loving nutty dressings. It’s just such a great way to bring in another form of protein, and heartiness, into a raw meal. The orange color of your dressing was lovely! Mmmm

Agreed on nut dressings and why I love so many hemp seed-based dressings, they seem as rich as nut-based, but higher in protein.

Costco is really great for lots of cheap and usually high quality produce, but it can also be a zoo!

My favorite dressings are anything with lemon and tahini included! And miso. Mmmmm. Creamy wonderfulness of raw dressings just cannot be beat. Ever. ;)
