Ugh, today was another gloomy and rainy day, the sky looked like this all day and opened up again minutes after I took the pic.
We had wind gusts up to 60 MPH last night, so I didn’t sleep that well with a terrified chihuahua sitting on me. It sounded like a freight train was running over our house and reminded me of riding out hurricanes and tropical storms while living in Florida. I don’t miss that! But spring is on the way, it must be since our pear tree is packed with beautiful blooms. Now we just need some sun … which isn’t part of the 5 day forecast, sigh.
So what to do with such crappy weather? Go to the mall of course! My mom and I headed to the mall for lunch and to check out sales. We had to fuel up first and grabbed lunch at an interesting Mongolian BBQ place in the food court where you get a bowl to load with whatever you want from a huge bar – odd frozen meats, veggies, tofu and a selection of sauces. I loaded mine with as many veggies as it would hold with a couple of tofu chunks and topped with garlic, hot sauce and sesame oil. They dumped the bowl on a huge, round grill and sauteed the contents with noodles and handed it back to me in a box to add more toppings. I just added peanuts.
I wasn’t thrilled that it was served in a wasteful Styrofoam box instead of the ceramic bowl I loaded, but that’s food court style I guess. And it ended up being way too much food, I didn’t eat most of the noodles.
I had the 30% off Gap coupon burning a hole in my pocket, so checking out the Gap was our first order of business. I needed some new pants, but was pretty disappointed after trying on many styles. I ended up with two pairs of cute crop pants for spring and summer. But some jean styles in my size were too tight while some were too loose. And maybe I’m cheap, but Gaps prices have been going up, some of the 1969 style jeans were $70.
At Gap, H&M and Express, I noticed a disturbing new trend – baggy cropped t-shirts. Not that I have a problem with showing off bare stomach, but these weren’t flattering at all being boxy and not form fitting. And they just looked cheap and not a fashion statement I could pull off at work.
While I was gone, hubby sweetly cleaned and sanded our wood-topped kitchen island and it looks gorgeous.
It’s just a cheap Ikea kitchen island, but it’s also my main food prep area that I regularly trash with food stains, chop marks and produce clutter. Now it looks good as new thanks to him. :-)
By dinner time we were both feeling pretty lazy and raided the fridge for leftovers. I pulled salad leftovers from last night and enhanced by adding chopped tomato, spinach and more sprouted lentils.
Hubby crisped up the potato wedge leftovers to go with his steak by adding a dash of cayenne pepper and crisping under the broiler for a few minutes.
The salad dressing had no problem covering the loaded salad after I tossed it together, so I had a huge meal salad loaded with greens and protein.
Now I’m off to finish the final load of laundry for the week and try to be optimistic that we’ll get enough of a break from the wind and rain this week to cram in a run.
Do you remix leftovers?
