Whew, what a long day of work, running errands, appointments and running. This short week isn’t feeling so short! Even Leela is looking a little worse for wear.
I swear she can tell when I’m a little stressed and gets a little stressed herself, usually getting a little more clingy following me around the house. And today begging for a new snack I snagged from Trader Joe’s, Roasted Seaweed, while I was munching it after a run. This 2-serving package was $1.50 and felt as light as air, but I still impulsed bought it.
I mean, it’s only 60 calories for the entire package – why not? :-)
The seaweed chips were very light, flaky, crispy and a little awkward to eat because they’re kind of bendy. But they had a satisfying salty flavor and would be great for a salty snack craving or crumpled on a salad.
Since the package didn’t last long for me, not sure I’d buy it again for the price.
After my long day and cramming in a 3 mile run while we still had some sunlight after work, I was feeling pretty mellow about dinner not sure what to do. That usually means a monster salad with a new dressing recipe to try. I threw together Gena’s Balsamic Tahini Dressing, but I mixed the ingredients in a bowl since I was too relaxed to dirty and wash the food processor, which seemed to work okay. I poured it over a salad of spinach, zucchini, red cabbage, avocado and sprouted lentils. Yeah, I’m getting low on fresh veggies, but purposely since I have a farm box delivery tomorrow.
The salad paired well with steamed spaghetti squash leftovers from last light for a fast dinner. Not exactly a glamorous meal, but fast and healthy. And the dressing was fantastic, but loving balsamic vinegar and tahini, I knew it would be. It’s tangy, rich, savory, and slightly sweet.
On my last Whole Foods trip, I discovered a new vegan wine for about $10 a bottle that I adore, Stephen Vincent Crimson. It’s has a slight tannin flavor that’s rich and not fruity. I’m not a huge wine snob, but I’m not a fan of bitter reds and this one was a great balance.
Now if you’ll excuse me, I think I’ll take a glass with my latest VegNews issue to a bubble bath.
