Whew, what a day! And another weird weather one with chilly wind and rain. I volunteered my lunch hour today to serve food at the company picnic, so I had a quick lunch at my desk before reporting for duty.
A giant green monster with hemp protein powder, flax seeds, chia seeds, zucchini, banana and red cabbage with an apple. It was good, but 3 hours later I was starving and dived into some granola for a snack. I mainly served meat-loaded chili and pork baked beans, something I’d never eat. But I was surprised to learn that I work with a lot of vegetarians and vegans. I was also glad I packed instead of planning to eat at the picnic, pretty much all I could have eaten was tomato slices and iceburg lettuce – bleech!
For some reason, I was really tired when I got home from work and just did not feel like making a huge production out of dinner, so I opted for a non-raw vegan meal to share with hubby using two new items I got at Whole Foods for just this type of evening.
Nothing too horribly freaky in the noodles, but still a departure from my usual eating habits. I occasionally crave pasta, but the traditional stuff is too heavy and does not sit well with me since going high raw. Also these are quicker because there’s no water boiling involved, simply drain and cook with sauce.
The noodles did not exactly taste like pasta or spinach, they have a very light, mild flavor. But, they seem to absorb the sauce flavors nicely when simmered in it. I did a fresh marinara sauce in the Vita-Mix and poured into a skillet with sliced tempeh, noodles, sliced portobello mushrooms and broccoli.
I topped with hemp-esan for a beautiful end result.
It was a tasty mesh of Italian with a vegan, healthy spin. Typically I go more raw for dinner and I will be tomorrow night. :-)
