Ahhhh, weekend time and it’s been a relaxing and productive one so far. Yesterday for lunch, I creative this work of art for a salad bowl using leftover protein punch broccoli, lots of fresh veggies and sweet peppers.
Doesn’t it look classy? :-) It was very filling and fun to eat with chopsticks.
Currently my garden is packed with kale, tons of it!
It seems to be growing so fast, I love being able to step out to the backyard to clip fresh leaves as needed and could see dedicating an entire planter bed to kale and spinach next year. Yeah, must be organic. :-)
I harvested quite a bit of it this morning to make a double batch of kale chips.
Yum and I could easily make about 3 more batches. I also harvested more to make a Gena Divine Salad for lunch.
It’s been a great tasting day so far! I hope everyone is having a great weekend, I got in some more running in our unseasonably cool temps this morning, feels more like February outside than May.
