Ugh, what a day at work. It started going down hill when I pulled an old inkjet printer from storage to find that the ink cartridges leaked and there was literally ink coming out of every seam and screw hole. Thankfully it was old and to the electronics scrap pile it went, but there are still blue blotches all over my hands despite washing them 42 times. Oh the Smurf joke possibilities … but I’ll spare you. :-)
Anyway, lunch was an interesting mesh of leftovers.
Leftover hummus, flying dragon broccoli, spinach, a tomato that needed to be eaten, sprouts and a little Annie’s Organic Shiitake dressing – not bad. I never mind leftovers for lunch, especially if they’re new recipes. It’s another opportunity to judge it and get creative with a new way to serve. But I think that’s a girl thing, a female co-worker eats the same spinach salad for lunch every day – the exact same salad. But her hubby can’t stand repeats and a lot of guys I talk to seem to be the same way. I don’t think I could eat the same salad everyday, but certainly don’t mind using up leftovers. How do you feel about repeats?
For dinner I tried my version of Gena’s Divine Salad.
I didn’t have kale, I used the bunch I bought this week to make kale chips. So I substituted zucchini ribbons and used a very ripe avocado, so ripe it was messy to cut, but melt-in-your mouth good. This is an awesome salad! If you have not tried it yet, do it! It was tangy and loaded with flavor. I was worried the sauerkraut might be too strong, but not at all and I will be using it in a lot more in salads now.
For dessert, I opted for one of my favs.
Frozen grapes, they’re amazing, especially in triple-digit summer heat and simple to store in the freezer.
