My job has become a junk food dumping ground that my family uses a lot, something about the IT department and junk food. For Christmas, my grandma thought it was a great idea to give all her great grandchildren bags of cookies and those awful flavored popcorn tins instead of toys. My sisters dumped all the junk on me and I dumped it into our break room where it disappeared that day. Unlike other departments where people are always bringing in treats and having potlucks, we hardly have food around and a lot of guys that eat like garbage disposals.
Anyway, I stopped by my sister’s this morning before work and my 5-year-old niece comes running up to me with a bag of junk food saying, “Mommy doesn’t want this, you can take it to work for fat people.” I laughed all the way to work with that one! That’s bad, I know, but I already need all the laughs I can get this week. She went through a phase at 3 of pointing out anyone person with a gut in public, including men, and loudly declaring they’re pregnant. That created an awkward scene for daddy while waiting in line at Sears.
I had this beautiful salad for lunch today with my mom.

I had extra butternut squash chunks in my fridge from Sunday’s butternut noodle adventure and created Gena’s Butternut Squash Dressing.
Spiralized cucumber, carrot ribbons, diced red pepper and cilantro piled up and coated in the dressing and topped with pumpkin seeds, hemp seeds, nutritional yeast, Italian seasoning and crazy gourmet course black Hawaiian salt – yum! The dressing rocks, it’s like a sweet dessert and ideal for a cool summer salad. Too bad our weather is still anything but summery here with another cold, rainy day.
