Hooray, Monday! Again… And this won’t be a fun week for me, it’s my turn to be on-call for work, just love getting woken up by a cellphone at 2 AM! There may be some cranky, sleep-deprived posts this week. I didn’t get as much done as I hoped for this weekend, I got side-tracked relaxing, training and playing in the kitchen. But I have enough kale chips to last through the week and sore legs to show for it! :-) As well as an incomplete house work to do list.
I had something I have not had in awhile for dinner last night, butternut sage noodles with a pretty side salad, both topped with hemp-esan.
It was a nice combo and I forgot how filling thick butternut squash noodles are.
The leftovers also made a nice lunch, I bulked up the salad with sauerkraut.
For dinner I tried another black-eyed pea recipe, Spinach & Bean Casserole, well sort of …
The recipe, while highly rated, is a major PITA. Put beans in a pressure cooker, saute onions in stove top, then bake the mess for 45 minutes? No thanks. Plus it uses canned tomatoes which my pantry is void of. I soaked a cup of black-eyed peas overnight, tossed fresh and sun-dried tomatoes into the Vita-Mix with whole fennel seed and pureed and simmered all the ingredients in the skillet for 25 minutes and it was great, much quicker than the original recipe. This was my first time using fennel seed and wow, I have a new favorite spice! It has a bit of a sweet, licorice flavor that went wildly well with the black-eyed peas. For a non-raw vegan meal, I highly recommend this recipe.
Anyway, more running tonight to prepare for a 5k next weekend and another one the following weekend, then maybe crash in front of the TV to finish the Lost finale and watch Big Bang Theory. Our weather is just screwy, it’s cold, windy and supposed to rain the next two days. I’m still waiting for spring to start … anytime now. Gotta enjoy the decent weather to run outside while I can! For those into running, how often do you run? Currently I’m running about 3 miles every other day to train and doing other cardio in between because I’m afraid of pushing it too much. But as I start looking at longer races, I’ll probably have to up the training.
